Mediterranean diet is very easy to vegenize and this delicious Vegan Greek Salad is a perfect example. However, this salad can be actually a full meal, if you serve it with oven-roasted potatoes. Even sourdough bread or pita would be a great addition as well. I personally like to switch it around and sometimes I have it with sweet potato fries too. So many choices, isn’t that great?

If you are wondering why olives aren’t included in the photo, I must apologize. Although I love olives, I try not to buy them too often. If I have them. Unfortunately, they are too salty, so I stop buying them. I actually do not buy any pickled products for this reason. I only have some when I am visiting my daughter. She is always having a great selection! However, feel free to add black olives or olives of your choice to complete this delicious salad.

Nevertheless, I have some recipes with olives, such as CAULIFLOWER CRUST PIZZA and VEGAN CHARCUTERIE BOARD. As I said sometimes I cannot resist. On the other hand, I can assure you that this Vegan Greek Salad is just as flavorful without the olives. One of the toppings I wouldn’t skip though, is the ALMOND FETA! It is super easy to make and it is delicious on the toast or with crackers as well. Not to forget, almonds are extremely healthy!

Ingredients
  

  • 540 ml can of chickpeas 2 cups
  • 1 Romaine lettuce sliced
  • 1 English cucumber cut into quarters
  • 6 red and yellow mini peppers or peppers of your choice
  • 8 Kumato tomatoes cut in halves or tomatoes of your choice
  • ¼ red onion ¼ sliced
  • Olives optional
  • 2 tsp dried oregano
  • Fresh oregano
  • Himalayan pink salt to taste
  • Toss all ingredients gently in a bowl, add Almond Feta, and toss gently again. Top with more feta and fresh oregano. Drizzle with dressing and serve,
  • GREEK SALAD DRESSING
  • ¼ cup apple cider vinegar
  • ¼ cup Olive oil
  • 1 tbsp Maple syrup
  • 2 tsp dried oregano
  • 2 cloves of garlic minced, or garlic powder
  • Mix everything thoroughly in the bowl with whisk or shake it in a closed jar.
  • ALMOND FETA
  • 1 ½ Blanch almonds soaked for 6 hours
  • 1/3 cup of water
  • 1 tbsp Nutritional yeast
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • Himalayan pink salt to taste
  • 2 tsp dry oregano

Instructions
 

  • ALMOND FETA
  • In a food processor, blend almonds with water until smooth.
  • Line a bowl with cotton cloth and transfer the mixture in the centre.
  • Wrap the mixture in the cloth by making sack and squeeze the water out with your hands.
  • Transfer the mixture into a clean bowl and add all the ingredients. Mix well and shape a ball. You may use mini spring mold if you have one and press the mixture it.
  • Cover with plastic and store in a refrigerator for up to 8 hours.

Notes

The Almond Feta can be stored in a refrigerator for up to 5 days if properly sealed in a container. It is also freezable.
