The NEW YEAR is literary around the corner and I am sorry for publishing this Veggie Charcuterie Board recipe the last minute. I just hope that you are still going to be able make it tomorrow, if you chose to. Luckily it is super easy, just make sure you soak your almonds early in the morning or tonight.
By the way, if you don’t have almonds you can also use cashews, which will be just fine. Also, the Pink Hummus can be made with chickpeas, instead of Black Eyed Pea, or you can use white Navy Beans. I made the hummus with chickpeas at this time and that’s why is not as bright pink as the one from my older recipe. Clearly, the white beans mixed with red beets works better to achieve that lovely pink. In addition, you could also try the GREEN HUMMUS if you preferer.
Nevertheless, both ways are delicious and the colors is nice as well, even if you are using chickpeas. I haven’t met anyone yet, who doesn’t like hummus, so even if you just make it plain it will be fine too. It’s the last end of the year, so just cut up your fruit and veggies, make a dip and relax.

VEGGIE CHARCUTERIE BOARD
Equipment
- Blender, 8" cake form, parchment paper
Ingredients
- SMOKED ALMOND CHEESE
- Blanch almonds 1 1/2 cup soaked for 6 hours
- Nutritional yeast 1 tbs
- Apple cider vinegar 1tbs
- Garlic powder to taste
- ¼ tsp Smoke liquid
- Himalayan pink salt to taste
- Water 1 cup
- Cheese cloth 10X10inch
- AVOCADO DIP
- 1 1/2 large avocado or 2 small
- Blanch almonds 1/2 cup soaked for 6 hours
- ¼ cup liquid from almond cheese
- ¼ cup lemon juice
- Garlic powder to taste
- Himalayan pink salt to taste
- Chives to garnish
- Blend all except chives in a food processor, transfer into a bowl and top with chives.
Instructions
- SMOKED ALMOND CHEESE
- Preheat the oven to 425F°, 200C°.
- Blend almond with water until smooth.
- Transfer the mixture into a bowl lined with cheesecloth. Wrap it tightly and squeeze the liquid out as much as you can.
- Discard the liquid and all the remaining ingredients. Mix well.
- By using spatula, fill up 8” spring cake pan lined with parchment paper. You can also use other similar size baking dish. Brush the top lightly with oil.
- Bake for about 15 to 20minutes until golden brown.
- When ready, let it cool down for a few minutes before removing it from the pan.
