Looking for a plant-based twist on a classic sushi roll? These Veggie Salmon Sushi Rolls are made entirely from scratch, bringing you a satisfying flavor that’s as delicious as it is wholesome. Whether you’re hosting a dinner party or simply treating yourself, this recipe is guaranteed to impress—even the pickiest eaters will be reaching for seconds!

Have you made sushi before? I did, two years ago—it was an Avocado Caterpillar Sushi, and you can see it HERE . At that time, I didn’t have very good lighting or a great camera, so the photos aren’t the greatest. Oh well, that was a long time ago! This time, I’d been planning to make these Veggie Salmon Sushi Rolls for a while, and I finally did it. They turned out delicious, but there’s still room for improvement in my rolling skills!

Lessons Learned
Especially the sushi with avocado on top and more carrots inside was not tight enough. I was trying to use up all the carrots, but I had lots of small pieces that didn’t hold very well. I learned that it’s much easier to work with long, thin slices or wedges. Although, if you’re making it just for yourself, it doesn’t really matter.
Sushi, however, always makes a beautiful presentation for parties or dinners with friends and loved ones. Therefore, learning how to make it is always a good skill to have under your belt. Since I’m not an expert yet, I’ve included a couple of helpful videos for you to watch. There are plenty more on YouTube if you wish to search for others, but I found these two very helpful, and you might like them as well.

What’s the Green Cream?
One more thing I would like to mention is the green cream on top of the rolls. In case you’re wondering why I didn’t include it in the recipe, it’s just a simple blend of avocado and veggie mayo. To be more precise, I used Vegenaise by Follow Your Heart, but you can use another brand if you like. To decorate, you’ll need a piping bag for cake decorating.

VEGGIE SALMON SUSHI ROLL: Discover How to Craft Them!
Equipment
- Sushi mat
- plastic wrap
- Sushi rice mixing bowl
- sharp knive
Ingredients
- 1 cup of Sushi rice
- 2 Nori sheets
- 1/4 cup rice vinegar
- 1 tbsp Maple syrup
- 1 tsp Himalayan pink salt
- 2 avocados HOW TO MAKE DRAGON ROOL
- 1 ½ cup veggie salmon RECIPE for VEGGIE SMOKED SALMON
- DIPPING SAUCE
- ½ cup Vegan Mayo
- 1 tbsp Sriracha or hot sauce of your choice you can add more if you like
Instructions
- Cook the Rice: Cook sushi rice according to the instructions on the package. Mix the cooked rice with vinegar, salt, and maple syrup.
- Prepare Your Surface: Place a sushi mat on your working surface and cover it with plastic wrap. Place the Nori sheet on top, shiny side down.
- Spread the Rice: Moist your hands with water to prevent stickiness. Pick up about 3/4 of the rice and gently spread it evenly on the Nori sheet. Sprinkle with water and gently press down.
- Flip the Sheet: Place your palm on top and carefully flip the Nori sheet over so the rice faces down.
- Arrange the Layers: Apply the carrot slices to the outside of the sushi roll by choosing the best pieces. Each piece should slightly overlap the next. For guidance, I attached a video showing how to do this with avocado, which works similarly for carrots.
